Idaho Falls Location Marks Latest Expansion for Rexburg-Born Concept
IDAHO FALLS — A dessert concept that began as a small food trailer in Rexburg has grown into a multi-location operation, and East Idaho now has a front-row seat to its continued expansion. Crispy Cones, known for its rotisserie-grilled pastry dough cones topped with gourmet soft-serve ice cream, opened its Idaho Falls location at 3512 South 25th East roughly a year ago under the ownership of Moroni and Karla Corral.
The shop’s signature product is built around a process that sets it apart from a standard soft-serve counter. Raw pastry dough is shaped around a stick, allowed to rise into a cone form, then placed on a rotisserie grill until it reaches a golden-brown finish. From there, each cone is rolled in cinnamon and sugar — or a rotating specialty coating such as crushed Oreo crumbs — before customers choose a spread, a soft-serve flavor, and an array of toppings.
“Everything here is top quality. We serve high-quality ice cream that has 10% butterfat,” Karla Corral said of the shop’s ingredients and standards.
A Build-Your-Own Experience With Signature Menu Options
Crispy Cones caters to both the decisive and the indecisive. Guests can mix and match spreads — including Nutella and peanut butter — with chocolate, vanilla, or a rotating flavor-of-the-month soft-serve, then pile on toppings and a finishing drizzle. For those who prefer a guided choice, the shop offers several named combinations. The Louvre Bug pairs strawberries with Nutella, while the Berry Royale leans into fruit-forward flavors. Chocolate lovers can opt for the Cocoa Chalet, and cookie dough fans have the Cookie a la Mode. Specific options rotate with the calendar month.
One of the shop’s more striking features is sheer portion size. The soft-serve mound extending from each cone can reach six to nine inches — generous enough that a single cone can reasonably be shared between two or three people.
For those who want the cone experience without ice cream, the grilled pastry shell stands on its own as a treat — similar in character to a twisted churro. Additional menu items include fruit cups topped with whipped cream and a drizzle, a smaller ice cream cup for lighter appetites, and a take-home package with cones, ice cream, spreads, and toppings for assembling at home.
Staff at the Idaho Falls location describe the soft-serve itself as a step above typical quick-service fare. “This is not like McDonald’s ice cream. This is perfect ice cream straight from our machines. It’s soft serve, it’s thick and everything here is perfect,” said employee Demmi Corral.
